Curried Eggs Recipe - Serves 4 - Easy
 
Ingredients
4 hard boiled eggs
2 oz butter
1 small onion, peeled and finely chopped
2 teaspoons curry powder
1 tablespoon flour
3/4 cup (7 fl oz) milk
Method
Heat a saucepan over medium heat
Put the butter and onion into the saucepan and saute until the onion is cooked
Add the curry powder and flour and mix well
Continue cooking for 3 minutes
Stir in the milk
Keep cooking until the mixture thickens
Remove from heat
Remove the egg shells
Cut the eggs in half
Remove the yolk and add the yolk to the saucepan, mixing well
Scoop the mixture and put into the egg halves
Serve warm/hot
