Bombay Potato (Bombay Aloo) Recipe - Serves 4
 
Ingredients
4 tablespoons vegetable oil
1/2 teaspoon turmeric
1/2 teaspoon chilli powder
1 large onion, thinly sliced
1 tablespoon finely chopped yellow bell pepper
1/2 cup of curry masala gravy (add 1 tablespoon of curry masala paste to 1/2 cup of water - there's a recipe for curry masala paste on this site)
2 coarsely chopped tomatoes
1 tablespoon finely chopped fresh cilantro
1 lb cooked potatoes, cut into bite-sized pieces
Method
Heat the oil and stir-fry the turmeric and chilli powder for 30 seconds
Add the onion and yellow pepper and stir-fry for 3 minutes
Add the curry masala gravy and stir-fry for 2 minutes
Add the tomatoes and fresh cilantro and simmer for 5 minutes
Add the cooked potatoes and simmer until hot
Serve
