Chilli Con Carne Recipe - Serves 4

Ingredients
2 tablespoons oil
1 large finely chopped onion
1 lb ground beef
1 large can of chopped tomatoes
1 teaspoon chilli powder
1/2 teaspoon salt
Hot water
1 can (14 oz) red kidney beans
Method
Heat the oil in a large frying pan over a medium heat
Fry the onion until a light brown color, about 9-10 minutes
Add the ground beef, mix well and keep stirring and turning often until the ground beef has been browned, between 10 and 15 minutes
Spoon the mixture into a medium sized saucepan, leaving behind the excess oil
Add the can of tomatoes, including the juice
Add the chilli powder and salt and mix well
Add enough hot water so that the mixture is just covered
Slowly heat the saucepan until the mixture is just simmering and turn the heat down to simmer
Put the lid onto the saucepan and simmer for 20 minutes, stirring every few minutes
Drain the juice out of the can of kidney beans and add the beans to the saucepan
Turn up the heat until the contents simmer and then turn the heat down to simmer again
Cover the saucepan and simmer for 15 minutes, stirring every few minutes
Serve hot on rice
