Leftover Ham and Rice Curry Recipe - Serves 6-8
Ingredients
2 cups (14oz) basmati rice
4 oz butter
1 large onion, peeled and finely chopped
4 cups (2 pints) boiling water
1 teaspoon curry powder
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1/4 teaspoon ground turmeric
1/4 teaspoon ground ginger
1/4 teaspoon black pepper
8 oz green peas (thaw if frozen)
3 cups (1 lb) cooked ham, finely diced
Method
Wash the basmati rice, soak in 3 cups of cold water for 30 minutes, drain and set aside
Melt the butter in a large saucepan over a medium to high heat
Add the onion and fry for 7 minutes, stirring often
Add the boiling water, curry powder, cumin, cayenne pepper, turmeric, ginger and black pepper to the saucepan and mix well
Add the washed basmati rice and mix well
Bring the saucepan to the boil, reduce the heat to low, cover with a lid and leave to cook for 15 minutes without removing the lid
Add the peas and ham, mix well and cook over a medium heat for 5 minutes (add a little more boiling water if the curry becomes too dry)
Serve hot
