Fish Curry Recipe - Serves 2
 
Ingredients
1 medium onion, roughly chopped
1 inch ginger root
2 bay leaves
3 red chillis
2 teaspoons mustard seeds
1 teaspoon cumin seeds
1 large tomato, cut into small pieces
1 lb fish fillets, washed and cut into small pieces
1 tablespoon salt
1 teaspoon turmeric powder
1 tablespoon garlic paste
1 small onion, finely chopped
1 teaspoon cilantro powder
Oil, to deep fry fish
3 cups (1 1/2 pints) water
1 tablespoon chopped fresh cilantro
Method
Put the ginger, bay leaves, red chillis, mustard seeds and cumin seeds into a grinder (a coffee grinder will do but it's best to have a spice grinder to stop flavor contamination) and grind into a powder
Put the powder and the roughly chopped onion into a food processor
Blend the ingredients into a paste
Put the roughly chopped onion, ginger, bay leaves, red chillis, mustard seeds and cumin seeds into a food processor
Blend the ingredients into a paste
Put the fish into a large bowl and sprinkle in the salt, turmeric powder and garlic paste
Rub the sprinkled mixture into the fish
Let the fish marinate for 30 minutes
Heat oil in a large frying pan over a medium to high heat
Fry the fish for 5 minutes and set aside
Clean the frying pan or use another one
Add 1 tablespoons (30ml) of oil and heat over a medium to high heat
Add the finely chopped onion and cook until a golden color
Add the paste that you made along with the cilantro powder and fry for 10 minutes, stirring regularly
Add the 3 cups of water
Bring the mixture to the boil
Add the fish to the liquid and cook for 15 minutes
Serve on rice and garnish with the chopped fresh cilantro
