Chicken Phal Recipe - Serves 4

Ingredients
2 tablespoons vegetable oil
1 large onion, peeled and finely chopped
1 red bell pepper, with seeds removed and coarsely chopped
1 lb skinless chicken breast, cut into cubes
1 inch piece of fresh ginger root, peeled and grated
2 garlic cloves, peeled and crushed
2 medium tomatoes, finely chopped
6 fresh chillis, finely chopped
4 teaspoons chilli powder
1 1/2 tablespoons extra hot curry paste
2 tablespoons lemon juice
1 tablespoon finely chopped fresh cilantro leaves
Method
Heat the oil in a large frying pan over a medium to high heat
Add the onion and fry for 6 minutes, stirring often
Add the red bell pepper and fry for 2 minutes, stirring often
Add the chicken and stir-fry/saute for 3-5 minutes until the chicken is sealed and has gone a pale color
Add the ginger, garlic, tomatoes, chillis and chilli powder and stir-fry for 3 minutes
Add the curry paste and lemon juice, 1/2 cup (4 fl oz) hot water and bring to the boil
Reduce the heat and simmer gently for 10 mins, stirring often (add more water if the curry becomes too dry)
Serve and garnish with the chopped cilantro leaves
