Easy Chicken Curry Recipe - Serves 4

Ingredients
2 tablespoons vegetable oil
1 lb 10 oz boneless and skinless chicken, cut into bite-sized cubes
1 garlic clove, finely crushed
1 inch fresh ginger root, peeled and grated
2 teaspoons garam masala
1 teaspoon ground cumin
1/2 pint cream
1/2 teaspoon chilli powder
1/4 cup (2 fl oz) tomato paste
1/2 teaspoon salt
1 tablespoon chopped fresh cilantro leaves
Method
Heat the oil in a frying pan over a moderate heat and then add the chicken
Stir-fry the chicken for 5 minutes until it is sealed
Remove the chicken once it is sealed and set aside
Add the garlic, ginger, garam masala and cumin and cook for 1 minute, stirring continuously
Add the cream, chilli powder, tomato paste and salt and mix well
Bring to just under the boil and turn the heat down and simmer for 5 minutes, stirring now and again
Add the chicken and simmer for 20 minutes, stirring now and again
Serve on rice garnished with the fresh cilantro
