Welcome to the June 2010 edition of the Curry Focus Newsletter!

We cook and review a fantastic curry that has only been on the site for a couple of months. It often amazes me how well spinach goes with curry and Ray experiences it first hand - Murghi Aur Palak (Chicken and Spinach) Recipe Review.

How many times have you tucked into the leftover curry remains the next day and find them not only tastier than the night before, but sometimes more spicy as well? The Curry Focus team decide to do some investigating and you can read all about it here - Why Does Curry Taste Better the Next Day?

When it comes to reviewing recipes we are not afraid to say if a curry is not as tasty as it looks, Ray braves his way through reviewing a Lamb Curry Cooked with Rice.

We look at the upcoming British Curry Awards, and review a Karahi Chicken with Fenugreek recipe as well as a very tasty and simple to cook Chicken Massaman Curry Recipe.

Welcome to the March edition of the Curry Focus Newsletter! When checking the Website statistics for the month I noticed that a large amount of people came across our site when searching on Google for Indian Food Facts.

Back in 2007 we wrote a great article on exactly this and if you missed it you might want to check it out - Indian Food - The Facts.

One interesting presumption that people make about Indian Food is that Indians eat their food with their hands and this is partially true, Indians consider this to be a much tastier way of eating, although often they will use forks and spoons as well.

One of the more regular questions that we get asked is whether a chilli is less hot if the seeds are removed.

The main heat of a chilli is in the membrane - the white pithy substance that joins the seeds to the flesh of the chiili. Capsaican is produced in the membrane and it’s the capsaican that gives the heat. The capsaican in the membrane does get into the seeds and the flesh but the main heat is in the membrane.

If you cut open a chilli and then cut away the membrane and seeds then the chilli will not be as hot. If you cut away just the seeds then you’ll reduce the heat a little but not by much.

There’s a blog on the Curry Focus website that explains a little more about why a chilli is hot.

If you try out a new variety of chilli and are a bit wary of how hot it is, then cut away the membrane and seeds before trying - if the resultant curry isn’t too hot for you, next time you could just use the whole chilli and see how that goes.

Over time, you tend to build up a resistance to the heat from chilli. So if you’re making a curry with 2 or 3 chillies, at some stage you’re going to want to make it hotter and the easiest way is just to add another chilli.

A time to be careful of is when making a curry for a few people. You need to know how hot they like their curries. If you’re not sure then you can make a guess and then have a side dish of raita for people to “cool down” their curry (raita is easy to make - check out the easy raita recipes). It’s nearly the end of January and we’ve noticed that we’re still getting visitors looking for leftover turkey recipes. We hope that you’re not eating leftover turkey from last Christmas otherwise there’s a strong possibility that you will be very ill. If you’re using freshly cooked turkey then all will be OK.

What is the best drink to drink with Curry?

Most of us, when we eat a curry, combine it with a few lagers… however, although beer can help to quell a “tongue on fire”, fizzy drinks are not always the best idea for drinking with a curry. We are going to look at exploring this further in articles to come.

Well, the end of the year approaches quickly and here, at CurryFocus, the team has been flat out not only writing articles but also adding tasty recipes to the site and reviewing them.

As promised, we published the article that shows you how many calories are in common curry ingredients so that you can work out how many calories (or kilocalories or kilojoules) you are eating (if you want to know).
